In Pixel Watch settings, there is an option to turn off notifications for messages, but it will not stop alerts from other apps, like Gmail. In the Watch setting, there is no option to turn off app notifications, except from the messaging app.

Google Pixel Watch 2 has a DND (Do Not Disturb) mode to silence the watch from all notifications.
